Chicken Pozole my way...

Living in Southern California you can't help but learn a few south of the border recipes! I like to add my own twist to long time favorites. Posole or Pozole, is a stew with pork or chicken that is great on a cool day! Traditionally its made around the holiday season, but this light soup is great any time of the year. You can use shredded pork or chicken. When using chicken you are supposed to have bone in types but it grosses me out so I use boneless chicken breast and add chicken base for flavor.

Chicken Pozole My Way

1 large can of Hominy

1 small can red chile sauce

1 mini can of diced green chiles

2 Tbsp chicken base

2 chicken breasts

for garnish:

cabbage, cilantro, lemon juice, radishes, jalapeno's

boil chicken breast

Rinse and chop garnish

remove chicken and strain broth

add chicken base and strained chicken stock back to pot

Then add red chile sauce, green chiles, and hominy

Shred and add chicken, then simmer for 20 min

I like mine with lots of fresh squeezed lemon and cabbage

I am really loving these right now so I wanted to share the love with you all!

First I must say my mom busted these out a couple Christmas's ago and I was unsure but this past Thanksgiving while we were visiting she brought em out again and before I knew it I had devoured half the bowl!! Now that my husband knows my deep love for these tasty morsels he used them as a garnish for our Bloody Mary's this weekend!

Not sure about you but I feel like Christmas is coming fast! There was hardly any Thanksgiving stuff in stores, I feel like we just jumped right into Christmas before Halloween!! Its going wayyyyy to quickly! The stores are already out of everything and shoppers are in an unknown frenzy! Slow down and enjoy the holidays people.

This seems to be the theme of the year. Buckle down and power through it without stopping to think. Almost like "hey everyone lets just get this year over and see if the next one is better." I remember it just being March 2 weeks ago! Then like whirlwind here we are in December! What's the hurry?? Where are we going????

OK OK I'm alive! It's been way too long! I needed to regroup and focus. I felt like a ball of stress, still do sometimes, trying to juggle everything. How much is too much on your plate?? Being a wife, mommy, 40+ hours a week at work, blogger, maid, homework, chef, PTA president, and whatever else I try to do! I know I'm not the only one who does this to myself, right? right?? Why is it always SO much??

I recently got away to Chicago for some much needed family time alone, a kind of reset if you will. Isn't it amazing how you can see your life much better when you step away from it for a second? Why be in a hurry always? Why do I never have time? How can I get MORE organized? I know no matter how much time I spend cleaning the house will always be a mess, however many loads of laundry I do there's always another load waiting!

Well I hope you all know I still love you and I heart blogging and reading other blogs. I want to get back normal if there is such a thing. Is there?? I'm going to damn well try some sort of normal.... Stay tuned...

For those of you that don't know, it means, "My Crazy Life". It seems as if the days are all running together and life just gets crazier everyday! I can't remember that last time I had a chance to sit down and write a "to do" list! That's like one of my favorite things to do, makes me feel organized. I think maybe I'm trying to do too much?? Is there such a thing?? For instance, I'm blogging, making dinner and cleaning the desk all at once. Oh and I just fed the dog too. I do like to multitask but then halfway through all the sudden "SQUIRREL" and there goes those 3 tasks! Oh and what was I talking about? teehee.....

Monday morning I started my day like always dropping my oldest off at school and on the way back a spider decided to come down from its web right in front of my face! IN MY CAR PEOPLE! grossssss.....
After having a mini stroke I rolled down the window and blew him out! See again "Mi Vida Loca"!

How about going to the gas station and this creep is rubbing on my purse as I'm standing in line!! STRANGE!!

Never a dull moment around these parts I tell ya! My wise words for myself and anyone else reading today are to select carefully the folks that you want to go on this ride we call life with you. You know they are keepers if you all survive!

Simple Fall Weekend....

I love cool weather like this! Overcast, light breeze with a little sunshine in the afternoon.... Its going to make tackling my backyard all the better too. This weekend is about cleaning and purging the crap. Simplifying things~ I need simple organization in my life. I feel like I'm being swallowed by all the chores piling up in the house. I'm holding myself to picking 2 sections outside and 2 sections inside to PURGE and simplify. Call it "Fall Cleaning" if you will. One of my first chores will be my hall closet. I've let it go wayyyyy to long and its time to tackle it. I'll post some before and after pics soon. Here's to simplifying things!

Bullying, disrespect and hate, oh my.....

This morning I kissed my oldest son goodbye when I dropped him off at school praying for the best after 2 weeks of bullying and being picked on by random BRATS.(sorry I'm upset) My heart hurt as I drove away and watched him walk into the school slow and hesitant but with his head held high....

6 hours later I get a text saying "I'm in the Principal's office, I got slammed into the lockers"

I'm sitting at work on a busy Friday FREAKING about how my child is and my thoughts running wild. My husband left work and went to pick him up. Turns out a 12 year old boy ATTACKED my son in the locker room because he thought my 10 year old son stole his lock? Ummmm what? While my son was telling me the turn of events with tears in his eyes, I asked "were you scared?" and he said "yes mom I was really scared, I didn't know what was happening".

Why couldn't I protect him, why does my child have to go through this? What has happened to kids nowadays? Lack of respect for themselves and others, ESPECIALLY adults.

I took my son for hot chocolate (extra whipped cream) and told him he did the right thing getting away and telling a teacher and that I am so sorry he has to deal with this. He said "mom, your the best mom a kid could ever have". I squeezed him as tight as I could and didn't want to let go. I HATE that he has to deal with this. HATE it.....

Every year I plant fun fruits and veggies in my garden. I've learned that I do not have a green thumb when it comes to Green peppers either. Every year I buy and they die. I've moved on and accepted that one of these years I'll get it... Anywho, here are some pics of my garden, taken with my phone so they aren't the best. YES I'm still without a camera, depressing I know....

I don't have much yet because we had a late frost(yes it happens in CA too) still a work in progress. Enjoy!

Grilled Summer Zucchini

Need ideas for that oh so abundant zucchini plant in your garden?? Here's an easy recipe I threw together with what was in the cupboard. Enjoy!

Grilled Summer Zucchini

*2-4 whole zucchini (ends trimmed and quartered)

*Mrs. Dash tomato basil garlic

*pinch of salt

*olive oil

After you quarter zucchini, put in shallow dish, drizzle 1 tbsp olive oil, add salt and 1 tsp Mrs. Dash. Mix together and grill to desired tenderness.

My kids love this! I couldn't believe it!

The battle in the garden continues for me! SO aggravating! I cannot get rid of these damn tomato worms! Now they are on my jalapenos and squash too! Any suggestions???

Oat n Flax pancakes

I'm always looking for ways to change up an original recipe. Every Sunday we make a big breakfast and sit down as a family to round out our busy weekends. This time I thought hmmmmm I wonder if I add this and a little of that would it taste yummy? I found with these that the oats make it a more dense pancake so if you want a "lighter" version omit the oats and add 1/2 cup of flax instead. Also beer instead of water makes for fluffy pancakes too. =)

Oat n Flax Pancakes
1 cup pancake mix
3/4 cup oats
1/4 cup ground flaxseed (not pictured here but we use Bob's)
1 tsp vanilla
1 1/2 cups water

makes 8-10 pancakes

HELLOOOOO! Hope everyone is enjoying their summer! I am! Been in the pool alot, that was a GREAT investment for sure. Work is crazy busy ALWAYS, I've never had a job this nuts! But I love it so thank goodness y'all don't have to hear my sob stories anymore about feeling like a loser!! I'm a happy girl this week especially because my baby girl is flying in tomorrow!! First stop is the beach then off to Arizona for some R & R!

I'm feeling wierd because I haven't been on blogger for a few days and I sign in and they changed it all up now! SO lets hope the commenting is back to normal too! YOU HEAR ME BLOGGER PEEPS!! ahaha I'm also feeling a little strange because I got my "happy back". Remember a few months ago I was complaining again (imagine that) about wanting my happy back. Now lets not get nuts I'm still not happy about the 187 loads of laundry that piles weekly! BUT I'm feeling happy and full of faith!

I feel a few new recipes on the horizon, plus I planted my garden finally so I'll be posting pics soon.

I am in desperate need of a VACATION! My first clue was that I can't even stand to have anyone in my personal space, almost like a need a bubble so nobody can cross!

Chaos! I feel chaos around me! I need calm and serene!

My eye has been twitching for about 2 weeks now too! What up with that???

UGHH its doing it now too.

I used to be so good at balancing everything.

I need to find that zen.....

Maybe I need to make a list of things I can control? If I start there maybe it will all fall into place?

My baby girl is coming in a couple of weeks and then I will whisk all the kiddies away for a Sedona relaxation vacation! I need positive! Happy Sunday!

Its been a pretty relaxing weekend with a successful yard sale, cleaning out the garage, starting a "stockpile" cabinet and snuggling with my boys for a free movie weekend on the tube!

Happy Weekend! This short week seemed longer than a regular week. Lots more ups and downs. Whoever said "when it rains it pours" deserves a swift kick in the ass because I need an umbrella!! Well I'm hoping the summer sunshine that comeing our way is going to kick the blues!! I can't wait to relax at the beach or poolside on the weekends!

Anyhow, when I wrote my 3 goals in my "Uhh Hello" post I was determined to at least get 2 outta 3. WELL lets just say I'm going to bed a half an hour earlier. That was the only 1 out of 3. Well better than 0 outta 3 right!! Time to try again, SO my 3 goals for the coming week are:

1. Have more patience.

2. Purge the crap from all the closets in the house.

3. Challenge myself to save 60% on my grocery bill!

Ya I know I'm probably going to be know as a huge dork for admitting I like some of these but here's what I'm lovin right now!!

My kids like to watch Big Time Rush and I heard it as I was walking through the house and it just sticks with me! Catchy tune and well it has to be cool if Snoop is in it! HA

One of the few novelty gums that doesn't turn into a rock while chewing!

This stuff rocks! Especially with a little malibu and a twist of lemon! I'm addicted!

I have been enjoying a handful of this EVERYDAY when I get the middle of the workday blah's! SOOO good. Hard to find though! Check out all the yummy flavors on their site! Does anyone know where else to get this besides Costco?

Uhhh Hello....

I CANNOT believe it has been about a week since my last post! I'm still here! I promised myself this weekend that I wouldn't touch the computer so I could get some stuff done around the house. ANNNDDDD I made it til Sunday afternoon.(it was hard because I have a great relationship with my computer! HA) I did get a ton of stuff done though. When I sat down last night it felt like I had been going nonstop for days. Actually I think I have. I cut up some fruit for the week, baked and cooked some goodies. I forgot how much I LOVE to cook. Yes recipes coming soon. It was a pretty productive weekend.

Today has been a Monday for sure! I almost had to bust out in song this morning, you know some sort of country western song about my truck breaking down(which it did) and any thing else that went wrong today on top of many emotional things too, my baby turns 8 Sunday, my big boy graduates from Elementary and my baby girl graduating high school! (gotta love a good country song to get out your emotions!)

Anyhow, I thought I would post 3 goals I have for the next week and then maybe just maybe I would hold myself accountable and get them DONE.

1. Actually sit down and eat my breakfast in the mornings.

2. Go to bed a half an hour earlier.

3. Have more patience.

OK so 2 outta 3 isn't bad right. I used to be SO patient until I had kids.

Graduation time is here again.... This year its bittersweet...

First of all my big boy Evan is "graduating" from Elementary to Middle school! He is my VERY strong willed child that will move mountains someday. I remember holding him in my arms in the hospital like it was yesterday! I thought the days would last forever and it just seems like time is going by faster and faster.

Where does the time go??

Next my baby girl Jessica is graduating from High School and going off to college!

She is one of my best friends kids whom I pretty much stole and called my own her whole life! I knew when I laid eyes on her 18 years ago she wouldn't let anything get in the way of her success and dreams.

Extreme Couponing or Hoarding???

I love to watch Extreme Couponing on TLC! I've been seen alot of different feedback around the social networking scene. What's your take?

The show actually inspires me to clip my coupons and save more. There are so many ways to save aside from this show too. I love seeing all the updates on my Facebook wall from all those coupon and freebie bloggers about whats out this week and where to stack your coupons(LOVE YOU GUYS).

OK back to my thoughts on this show. I do think its AWESOME that they work at couponing to get thousands of items for free. I just have a few questions. I know its called EXTREME couponing but why do they always get 100 or 200 or even 400 of something? To stockpile in their house? Some of it takes up half the house! Could this be considered "hoarding"? I understand its a rush to save loads of cash and I'm not badmouthing any extreme couponers out there, just giving my opinion. I wish I had time to go extreme sometimes! Also NONE of the stores around here would allow me to go over 3 coupons for the same item, how do they do that for hundreds? And my local store only doubles up to the dollar. Bummer. I think even since this show came out our store has changed its coupon policy. SO how do they do that on the show???????? Will it cause prices to go up??? I need to know!

I love freebies, I do stack my coupons for a few freebies every couple weeks at Target. They have great coupons on their site and allow you to use the maufacturer coupon PLUS the Target coupon! (the reason they are one of my favorite stores!) And I've gotten a ton of freebies from my favorite Products Facebook pages too.

So what are your thoughts on this and do you think its hoarding??

I sure did! I felt like I was spiraling out of control! Not knowing where any of my time was flying to! OH and did I mention gettting swallowed by chores, lists and projects! My husband & I skipped town for a couple days with the kids to Las Vegas. Our hotel didn't have a casino in it so there weren't that many crazies around. We lounged the whole weekend and I didn't even hit the slots until Sunday morning while everyone was finishing brunch I snuck out and won a quick $20. That was it, all I needed. I must say lounging by the pool in the warm winds was the best.... It was like hitting the reset button and now I'm back to normal.... for a while anyway....

I hope all the mom's out there had a fabulous day too! I did and it carried over to today when I arrived home from work to see that my husband and kids cleaned the house and made dinner.... Ahhhhhhh now I just need to get that pedicure I promised myself weeks ago and I'm complete. Happy Monday peeps!

The wind here is crazy today, this is not out of the norm for us either. I'm almost thinking we should be renamed the "windy city"! Gusts up to 70mph today. Its awesome when I'm driving and have to dodge tumbleweeds, or slow down to pass an overturned semi, ladders or other debris! NOT! Its actually kinda scary! I'm super bummed that I can't do my gardening today either, I really wanted to mulch and wash my car(ok I was going to make my kids wash my car). Anyway, I hope you have a FAB weekend no matter what you do!

Weekend Breakfast Biscuits

This recipe came from my mom's hubby Rick, we call them "Riscuits" but I thought I'd change them for y'all to weekend breakfast biscuits, since this is a wonderful Saturday morning munchie! Rick likes to add tomato slices and hot sauce, and really you can add what you like but this recipe is what my family likes. There are NEVER any leftovers either. Enjoy!

Weekend Breakfast Biscuits

1 egg per sandwich (sometimes I split the egg if the bicuits are small)

1 roll of beef (or regular) summer sausage

1 roll biscuits

sliced cheese

preheat oven and get biscuits cooking

Slice summer sausage

cook sausage until browned

fry eggs how you like them

line it all up for assembly line

I like to slice open hot biscuits and assemble with cheese first to ensure yummy melted cheese....

Whale watching....

I absolutely LOVE this sort of thing! One of the perks of living in California, kinda makes you forget for just a minute about all the insane traffic and crazy peeps!

This was our second time going whale watching, the first we saw nothing so Dana Wharf Sportfishing & Whale watching was kind enough to give everyone their tickets back to try again another day! I love them and will FOR SURE be cruising with them many more times to come! Follow their Facebook Page for great pics, specials and updates!

This time we still saw no whales but got to experience a few pods of dolphin! It was incredible! I've never seen SO many in one spot! The captain was awesome and got us right in the middle of them! I LOVE dolphins so I was in awe and the kids were amazed at how neat these creatures were. Unfortunately I am down to only one BUCKET of a camera so the pics weren't that spectacular. OK OK I'll get to them next!

Finally I caught one!

I wish I had a better camera but I'm saving up for one SOON! If you ever get a chance to go whale watching DO IT! Even if you don't see anything the serenity of being out on the water was enough for me. Away from land, cell phones, computers for a while.

Well I started my new job on 3/15 and where did the month go? I have struggled to find balance with it all. I've been unemployed for 2 years and its hard to get back into it all! I'm searching for some sort of balance. I love a good challenge but this one is tiring. I have so many good posts I want to share but can't find the time! Slowly I am coming back though, don't give up! I haven't done a freebie Friday in a while so I thought I'd throw a few on here, who doesn't love a freebie?

I'm very thankful for what I have, healthy family, job, roof, food.... I still have a wishlist though. Here are a couple things I am putting out there in the wide wide world so that I may own them and hold myself to getting them. Or maybe they will just magically appear on my doorstep??

1. a new camera, I went from having 3 to now having a busted POS that I have to squeeze shut to take a pic. Super ghetto. Here is my dream camera!

2. Nerdy I know but I want and over the range micro. Never had one and I need more counter space. Not to mention the microwave we have is 11 years old! ICK

3. A beach cruiser, if you live in CA I think its a necessity??

Mediterranean Chicken/Fish

I first saw a recipe similar to this on Food Network and of course had to make it my own. I'm not a big fan of fish but cooked this way I really liked it. Last summer we took fresh salmon and stuffed it with this then pouched it on the grill, delish! Super easy to make. This was my first time trying it with chicken and it turned out very flavorful and moist. You can use 4 of each type of meat or 2 of each like I did with this recipe.

Mediterranean chicken/fish

4 breasts/filets of chicken or fish

2 limes

1/2 cup drained pitted chopped kalamata olives

1/4 cup drained capers

2 tsp chopped fresh rosemary leaves

1/4 cup Olive oil

preheat oven to 475

place chicken/fish in ungreased pan, season with salt and pepper

Cut one lime in to thin slices and place on top of chicken/fish

In bowl add juice from 1lime, olives, olive oil, capers, rosemary

mix

pour evenly over chicken/fish

Bake chicken 30 min or until done, bake fish 8-10 min

Serve! YUM

I would take an extended vaca in Hawaii, Italy, Australia and Canada....

I would hire someone to clean my bathrooms and mop floors(I'm still refusing my hubby's suggestion to put hardwood floors in the house because I'm a vacuumer not a mopper. Wait are those words?)... I'm ok with doing everything else....

I would buy a small ranch and grow fruits and veggies to sell in the farmstand at the end of my long driveway...

I would also have a couple chickens and horses....

I would bring my entire family with me to enjoy that vaca...

I would also open a few teen centers to keeps em outta trouble...

There's so much more but I have to get back to reality and go back to scrubbing floors and bathrooms.... What would you do if you won??

It sure is cold here.... I know its prolly colder in other parts of the US but we are allowed to say its cold when we are used to sunny SoCal! I have my favorite pink slippers on so it makes it more bearable. I had a bit of a sweet tooth after dinner, all we had was ice cream... Sweet tooth is taken care of but now I'm even colder. I'm wierd, I know this.

Need to do this, need to do that, need to go here, need to go there.... Life as a MOM is already crazy busy as it is!! I'm trying to get my footing here! I know its only my first week back to work but my brain hurts from all the "training" AND everything else I need to do! I like to say that I'm a fairly organized person but if you could see my house today(I can't bring myself to take a pic to show you) it looks like I've just made more work for myself! Either that or a dishes, laundry, toy, crumb, paper and whatever else is floating around here, BOMB went off! I'm thinking there are going to be LOTS of little posties everywhere to get me back on track and organized! Oh and this gloomy weather isn't helping the motivation either!

I'm thinking of setting a timer for 15 minutes per room for myself as a challenge! I ALWAYS get distracted by this damn computer while getting things done around here which leads to unfinished business everywhere. HEY its right in the MIDDLE of the house so I get sucked back in, lets face it, whats more fun cleaning or surfing? teehee SO if I set the timer maybe I will get more done then reward myself with some puter time.

What are your best organization, motivation or getting things done tips?

Well kinda wordless and kinda not.... After MANY months, days and hours of searching, interviewing, being shot down, kicking, screaming and whining to you all here, I finally got a job! I'm looking at it as another thing to add to my daily to do list! I thought it would be difficult to get back into it after not working for over 2 years but its like riding a bike, you fall off the first day but it gets easier as the time flies! I haven't quite figured out what timeslot everything will fit in to but I'm a good multi-tasker so you haven't heard the last of me!! I thought I'd post a picture of the 2 things I'll be seeing more of in the weeks to come. My handy dandy put a smile on your face Disneyland coffee mug(I actually prefer my Tupperware travel mug because it holds more coffee and keeps it hotter longer) and my favorite lunchbag that fits EVERYTHING I need to take in it! Happy Wednesday! PS I'm glad its almost over and one day closer to Friday!

So as I'm checkin my teeth this morning for any remnants of the flaxseed cereal I had for breakfast, I noticed how white my teeth are getting! I had somewhat yeller teeth (imagine me sayin this in my fun bumpkin accent) from my addictions to coffee and soda, oh and a few years of smoking too, bleck. My mother has been hounding me to whiten them for YEARS, I recall getting whitening products as gifts too, real subtle mom! Anyways I've tried em all and all they ever did was make my teeth sensitive. HELLO you can't drink coffee with sensitive teeth! Well I got some samples of Crest 3D Whitestrips a few months ago and noticed a difference right away! I only use them about once every 5-7 days too. No sensitivity so far and they don't "revert back" to yellowish either. After using up the samples I requested that Santa aka my husband leave some in my stocking this past holiday. I couldn't be happier that the yeller teeth are gone! Just thought I'd let y'all know another somethin' somethin' I'm in love with.....

Ever feel like you are being tugged in a million different directions?? I for sure know that feeling, sometimes I throw up my hands and say ok what's next? I'm sure I am not the only one here, right?? RIGHT?? haha
Let's face it, life isn't easy, so what do you do to get through it? I try to take it with a pound of salt and keep pushing through.

*I'm an everyday pray-er. I know the Lord will always bring me through it. And yes sometimes I come away from that and just need a biblical kick in the rear!

*Parenting, my kids must be at the "talk back" stage. (you know the stage past talking back) I'm so exhausted at the end of the day. Rewarding and HARD all at the same time. Oh how I love those little stinkers though!

*Exercising and my weight. Simple, exercise and eat right! I have NEVER been able to balance the two. I'll get on an exercise kick and half ass the eating right OR I'll get on a healthy eating kick and half ass the exercise. I've maintained my 20lb loss for almost 2 years but I've only lost an additional 2 or 3 since. ughh..........

*Soda... so bad for you..... but so tasty..... Maybe I would lose a few more lbs. if I cut out the soda?? Easier said than done, I love the ice cold bubbly loveliness of a soda.....

Small Changes, Big Results: Back Porch Light

Welcome to the weekend, I'm deciding what to add to my "to do" list for this month. Not everything in my home is as I would like it, we try to do little by little here and there. Its amazing what these small changes can do and the big results they give.(I'm kinda nerdy when it comes to this, I even get excited over new wind chimes) I'm challenging myself to continue throughout this year making little changes that give big results. I'm sure if I skipped that Starbucks or Chik-fil-A run a couple times a month I would be able to get alot done with what I'd save too. I'm going to call it "Small Changes, Big Results". I love a good challenge and hopefully by the end of this year I'll have alot accomplished around here.

First order of business is to take care of our outdoor lighting. Our porch light has been dying a SLOW death, sometimes it works and most of the time not. We have skunk friends that like to hang back there so when we let our dog Marlee out we need to be able to see that the lil critters aren't around.(Marlee's been skunked twice!) The fixture has been there since the house was built 16 years ago, I'm thinkin its time for a new one??

Hey don't make fun, at least I'm using an energy saving bulb! =)

~ WARNING you may eat more than 2... or 3..... uhhhhhh nevermind.......

Thanks to Kristy over at Mommy Hates Cooking for inspiring me to FINALLY make cookies with cake mix(she has a healthier version of cake mix cookies too)! I had some carrot cake mix so that was my cookie of choice. Apparently I am the last one to make these kind of cookies using cake mix. I was SO excited to make them and take them to the school for people to try, turns out they have ALL made them before! HA, so my excitement fizzled. Next time I'm going to try the red velvet mix!

Carrot Cake Cookies

1 box carrot cake mix (or whatever your favorite is)

1 stick of butter (melted)

1 egg (you can use and additional egg white if you want a less dense cookie)
1tsp. Vanilla

1 tub cream cheese frosting

Preheat oven to 350

add all ingredients except frosting in bowl and mix

I used my mini scooper just to be cool

no need to grease the sheet because we used butter

bake 12-15 min or until slightly cracked on top

I cut the tip of a baggie to frost the cookies

Uhhhh HELLO I had to take a bite right away!

These were so moist and chewy! I will be making them again!

WOW! I can't believe its been a year since I took that scary first step and clicked "create blog"! I have no regrets and am so thankful and blessed for all the great feedback, new blogger friends, and having a place to put my thoughts out there. It's not good to keep them all bottled up in your mind you know!

When I was contemplating a name for my blog(its an important task), deep in the back of my mind I was thinking "Remember Ember" because whenever I've introduced my self over the years everyone automatically says "Amber" instead of "Ember". SO I would always say "No, its Ember with an E, you know REMEMBER Ember in SeptEMBER, NovEMBER and DecEMBER" just to pound a reminder in their heads. It didn't always work, I still get called Amber, daily. I'm used to it by now. Anyhow that was the ONLY thing that kept popping into my head and I needed input from my friends and family, so I headed over to a friends house to propose the idea of starting a blog and that I wanted to hear some ideas for a name. I just about fell over when my friend said "You should call it Remember Ember". I knew then a blog was born!

I LOVE writing this blog, and I LOVE the support I have gotten since starting it! SO here's to many more successful years!

Here's a quick recipe I made using their all purpose sauce.

Keilbasa bowls

1 package turkey kielbasa (or whichever kind is your favorite)

3 tablespoons Country Bob's All Purpose Sauce

Add your favorite veggies, I used the "asian" mix

Your favorite steamed rice (we love jasmine rice)

Slice and brown kielbasa in pan, then add CB's sauce, cover for 5 min and turn heat off.

Layer rice, veggies and kielbasa! YUM

Parenting or hindering???

Who knows anymore? Since my oldest is embarking on middle school (gulp) soon, I've been thinking alot about, wait, OK what haven't I been thinking about? My son will be a "young" middle schooler because he has a late birthday and started Kinder at 4. And will graduate at 17. Well I graduated at 17, however, girls and boys... Two completely different scenario's. Did I screw up by being an over eager parent and putting my child in Kinder early? Well.... That's just the beginning of my questions.

I remember as a kid playing outside with no adult supervision, riding bikes in the street, walking to the local park, walking home alone from school, having to be home when the street lights came on, etc. Things were fine then, I'm not sayin my parents didn't worry or I was NEVER supervised, I'm just pointing out the ability to be more lax in those days. Today there is NO WAY I would let my boys be outside without some kind of supervision, and definitely NOT in the street, or going to the next neighborhood. Too many careless peeps out there not to mention FREAKS. So, am I overprotective? Am I hindering my child's maturity level because I won't let him cross the street by himself or be out of some sort of eye shot? Why is it SO hard to let them flutter away from the nest and soar? FEAR? I want them to be independent and responsible adults. What do you think, what do you do to ease those worries? What "systems" do you have for your kids?

I had alot of errands to run this weekend and while enjoying some soothing tunes I noticed alot of personalized license plates. I'm pretty aware of my daily surroundings and never before can I recall seeing SO many personalized plates! Everyone with a personalized plate must have been out running errands too. teehee! I saw "7 FITTI" on a BMW 750, "LO KEE" on some sort of low rider and a few more. Well that got me thinkin, and no I didn't hurt myself thinking, HA! I've never had a personal plate on any of my bagillion cars I've had over the years, and wow, what on earth would I put on one??? I couldn't for the life of me think of anything!!! So while having one of those "if we won the lottery" fun conversations later with my hubby(yes we do that as therapy to get our minds off stress sometimes) I decided my first plate on my dream car down below there would be "EMSASTN" !! Plain and unoriginal I know but WHATEVER, its what I would pick.... today.... =D

I was so excited for this opportunity to review Skin MD Natural Sheilding lotion. Skin MD Natural can be used as an everyday moisturizer, sensitive skin care, or for eczema and other skin issues! My husband has psoriasis and my youngest son and I have eczema so we are always looking for good products. Freebie Tuesday: Gloomy but not gloomy

It's a gloomy Tuesday in Southern California, we are supposed to get some rain for a couple days. Makes for terrible driving too, I mean people on CA freeways already FREAK out when it comes to merging and they all slam on their brakes, nobody wants to let anyone in, hence the reason for the major congestion everywhere. Oh and the unnecessary construction too. Don't get me going. But speaking of driving and construction, while driving home from the kids' dentist (some people give their kids candy for Valentine's, I take mine to the dentist! HA) I see this guy in a construction truck behind me in this BRIGHT orange shirt, kinda swervin and lookin like a spaz. Turns out he had a Valentine balloon in his passenger seat that kept pelting him in the face while he was driving. I giggled - alot - then thought "hey buddy why don't you roll up your window and that balloon might settle down?" Just sayin... teehee....

Creamy Potato Soup and a big THANKS!

Thanks to you ALL for the warmth and encouragement! I read EVERY comment, email and message and really appreciate you taking the time to encourage a tired old me! I really needed to get all my feelings out! You know "pruning for regrowth"!

As everyone on earth knows (I'm a whiner sometimes, what can I say) this house has been with sickness for the last 3 weeks, SO I took that opportunity to experiment with making soups. Some not so good but this one was a tweaked version from my days of hangin with the girls in Wisconsin and being snowed in. We had nothing to do but cook and chat, especially since we lived in a tiny little town with minimal plowing! Hope all you folks out there that have been snowed in have a little sunshine now!

Creamy Potato Soup

7 medium size potatos

64oz chicken broth

1 tsp dill weed

1 chopped yellow onion

6 slices chopped crisp bacon (or turkey bacon)

1 cup milk or cream (I used 3/4c & 2tblsp sour cream)

salt and pepper to taste

Chop and crisp bacon (I used butter to brown turkey bacon)

Drain and set aside, dump grease from pan if using regular bacon

In SAME pan start sweating onions, add salt and pepper

Add all chicken broth and let simmer, scrape yummy bits off bottom of pan

Peel and cube potatoes, then add to broth mixture, let simmer on low for 30 min or until potatoes are soft

When potatoes are soft and bubbly add milk/cream & dill, stir and let simmer another 30 min

Be sure to taste and season as needed, sometimes potatoes can be super bland!

Add bacon and simmer for 20 more minutes, then serve with shredded cheese, chives or whatever topping you like!

Sick of being sick, and reviving my faith....

So today I'm choosing to redirect my thoughts away from the sickness, maybe flushing my thoughts out and shoo-ing away negativity.... WARNING: Raw thoughts ahead...

My life as of late hasn't been roses and butterflies. (no I'm not discounting what others have been going through either but its my blog so I guess it can be about me today) We are taking things a day at a time. I sometimes look at others situations and think "what am I doing wrong". I am a Christian, I'm a believer and I have a pretty strong faith, always have. Yes I occasionally toss a few back, yes I occasionally swear, yes I occasionally gossip, but I don't think that makes me any less of a believer or that G-d loves me any less. I always feel that if you are doing what you should be and you are on the right path the good comes abundantly. However, if you are not heading in the right direction or maybe need a wake up call things can take a turn. Well I feel that this "turn" hasn't stopped. My husband and I both lost our jobs around the same time a couple years ago, he got work right away thank goodness, but here I still sit jobless. I submit about 25 resumes and applications a week and go on about 4 interviews a month. I've heard alot of "we really liked you BUT" too. Its exhausting. I'm back to feeling almost worthless. We have had to sell alot and give up things we love to get by. I am thankful for a roof over our heads and food in our mouths OH and the Internet for which I therapeutically spew all these thoughts. I'm tired and sick... of being sick too.... Is this where G-d wants me? At my lowest of lows so I can only look up??? I'm thinking so, I opened my bible last night and actually read through it. It was like my telephone to Him. I felt like it fed my soul a little, then I prayed. All this time I've wondered what I'm doing wrong, maybe, just maybe I've come away from my faith? I needed a swift kick in the pants? Years ago someone asked my husband what was one of the qualities he loved about me and he said, "I love her FAITH, she has SO MUCH and shares it with everyone". I want that back! Its time to throw in the towel and stop trying to control EVERYTHING... So here goes.....

Here's to sunshine and roses and butterflies and FAITH in whatever it is you believe in.... =)

PS Thanks, I really needed to get that out, and guess what I think I actually got a few tears in my coffee!

I'm alive BARELY!! Saturday was a my very good friends' 40th Birthday party, broken phone, broken camera, broken crockpot, barf on my favorite UGGS, need I say more.....

The fun continued on Sunday when my PACKERS won the superbowl!! YAY! Now you guys don't have to listen to me chirp about football anymore either! Ok so I probably will continue for a while. Football is my favorite sport with bullriding at a close second but you might have already figured that out, ok the football anyway!

Oh, did I mention I'm sick AGAIN! Happy Monday, I'm going back to bed....

Another body down in this house today! My poor Ethan, he was up at 3 with a 102 fever and hovering the toilet! UGH I wonder how rich I would be this year so far if I owned stock in any of those companies above??? I can dream right?? Attendance at our school is horrendous due to all the GERMS too. Don't these germs KNOW I am trying to help plan a 40th Birthday Bash for Saturday among the 377 other things on my list??

Kinda like KNOWING I needed to be back to the school on time this morning to drop of my other son and I hit EVERY SINGLE red light and got behind every SLOW moving vehicle...

Time to TRY and go back to bed and maybe reset the day, week, month???? I know I'll dream about those millions in stocks...

Some things, not so much....

Its almost FRIDAY! I'm doing the happy dance because I LOVE the weekends! It gives me time to spend with my family and work on the house and yard.

Sometimes I like to post things I'm diggin on, today I decided to post some of the things I'm NOT diggin on. Now look I'm not tryin to piss anyone off or steer you away, just in my humble opinion. =)

*Bananas!!! I don't normally eat them but the peeps in my house do so I buy them regularly, I swear they brown in minutes!! What the heck, one can only make so much banana bread GEEZ!! I've tried storing them differently, buying different brands, UGH still the same! Oh and one of the reasons I don't eat them is the sounds they make when you eat them.

*Raw meat, YUCK, as some of you know from my tweets and FB posts the other day, I had to manhandle a WHOLE raw chicken to bake early in the morning since its been so warm here. I usually have my husband handle that type of thing but he was unavailable so that left me to clean out the innerds and prep and cook it! Raw chicken grosses me out the most. I DON'T like any meat on the bone, I can deal with ribs, but if you have ever seen me eat meat off the bone I usually leave a layer of meat on top so I don't have to see the actual bone. The smell too, ick.

*Elevators, ugh being in a box with no control gives me panic attacks!

*Bees & Wasps, wherever I am they find me and sting me repeatedly. I once got stung by 2 different bees within 5 minutes, one of them was DEAD! Good thing I'm not allergic because I hold the record for most stings!

*Original CROCS, don't be offended, I just think they weren't thinking "fashionable" when they were created. I have seen some fashionable styles now however the OG's aren't. Prolly why they are so comfy and not so pretty?

Stuffed Mini Peppers

I first saw Giada's version on Food Network a couple weeks ago and my KIDS asked me to make them! I thought I'd better do it then, most kids don't ask you to make something like that! My kids love all kinds of different foods, some even I don't care for!

I changed the recipe to my liking since we don't eat pork or peas, it calls for pancetta or bacon and peas which I replaced with spinach and turkey bacon, feel free to use what you like!

Stuffed Mini Peppers

3oz, or 6 slices bacon (turkey bacon or regular) chopped

3/4 cup part skim ricotta cheese

1/3 cup grated parmesan

1/2 cup chopped spinach

24ct 2-3" long sweet baby peppers

Preheat oven to 350. Spray baking sheet with cooking spray, set aside.

add 1tsp butter to pan(if using turkey bacon) and cook bacon until crisp

add ricotta, parmesan, chopped spinach to bowl and mix (salt & pepper to taste)

add drained, cooled bacon to mixture

set mix aside and wash and cut peppers (kinda daunting task but great reward when cooked)

Cut 1/2inch from stem and clean out seeds

use a small spoon and lightly stuff each pepper to rim with mixture

use leftover stuffing to top off peppers

Bake at 350 10-15minutes or just until barely soft and filling is hot, I like my peppers with a bit of a crunch so I pulled them out a little early.

Let cool just a bit. Arrange on plate and EAT

Welcome to the weekend folks! It seems like this past week was emotional like no other, every day there was a different event to spark a roller coaster of emotion!
