Coconut Pecan Bread/Cake

It can be a loaf, bundt or whatever you choose.  For the holiday's I make mini loaves and give them away as a gift, or for holiday parties I make it in a bundt pan and sprinkle lightly with powdered sugar.  Even those who aren't big fans of coconut like this stuff!  Everyone ALWAYS asks when I'm going to make it again!  My gramma gave me the recipe, no its not a big secret just good old fashion southern hospitality.  Here's a shout to LA (Lower Alabama)  =)  The best part about this post is that I get to have a slice as I type this ....  mmmmm......

Prep time: 10 minutes   
Cook time: 30-50 min depending on pan, just insert a knife in the center, clean knife=done!
Makes 2 regular size loaves, 4 mini loaves or 1 bundt pan

Here's what you will need:
1 box yellow cake mix
1 tub coconut pecan frosting
3 eggs
1/3 cup oil
1 1/4cup water

PREHEAT oven to 350 degrees
Add all ingredients in bowl EXCEPT frosting

Mix well

Then add entire tub of frosting

mix well

fill greased pan 3/4 full (this expands quite a bit while baking)

Bake in 350degree oven for 40 min or until knife inserted in center comes out clean

Let cool....

Then slice....  mmm....
