Thanks to you ALL for the warmth and encouragement! I read EVERY comment, email and message and really appreciate you taking the time to encourage a tired old me! I really needed to get all my feelings out! You know "pruning for regrowth"!
As everyone on earth knows (I'm a whiner sometimes, what can I say) this house has been with sickness for the last 3 weeks, SO I took that opportunity to experiment with making soups. Some not so good but this one was a tweaked version from my days of hangin with the girls in Wisconsin and being snowed in. We had nothing to do but cook and chat, especially since we lived in a tiny little town with minimal plowing! Hope all you folks out there that have been snowed in have a little sunshine now!
Creamy Potato Soup
7 medium size potatos
64oz chicken broth
1 tsp dill weed
1 chopped yellow onion
6 slices chopped crisp bacon (or turkey bacon)
1 cup milk or cream (I used 3/4c & 2tblsp sour cream)
salt and pepper to taste
Chop and crisp bacon (I used butter to brown turkey bacon)
Drain and set aside, dump grease from pan if using regular bacon
In SAME pan start sweating onions, add salt and pepper
Add all chicken broth and let simmer, scrape yummy bits off bottom of pan
Peel and cube potatoes, then add to broth mixture, let simmer on low for 30 min or until potatoes are soft
When potatoes are soft and bubbly add milk/cream & dill, stir and let simmer another 30 min
Be sure to taste and season as needed, sometimes potatoes can be super bland!
Add bacon and simmer for 20 more minutes, then serve with shredded cheese, chives or whatever topping you like!

I love potato soup, it's easy to make, affordable and healthy. You can also substitute cream cheese for the sour cream. I love to add a leek to my soup.
