Mediterranean Chicken/Fish

I first saw a recipe similar to this on Food Network and of course had to make it my own.  I'm not a big fan of fish but cooked this way I really liked it.  Last summer we took fresh salmon and stuffed it with this then pouched it on the grill, delish!  Super easy to make.  This was my first time trying it with chicken and it turned out very flavorful and moist.  You can use 4 of each type of meat or 2 of each like I did with this recipe.

Mediterranean chicken/fish
4 breasts/filets of chicken or fish
2 limes
1/2 cup drained pitted chopped kalamata olives
1/4 cup drained capers
2 tsp chopped fresh rosemary leaves
1/4 cup Olive oil

preheat oven to 475
 place chicken/fish in ungreased pan, season with salt and pepper
 Cut one lime in to thin slices and place on top of chicken/fish
 In bowl add juice from 1lime, olives, olive oil, capers, rosemary
 mix
 pour evenly over chicken/fish

 Bake chicken 30 min or until done, bake fish 8-10 min 
 Serve!  YUM
