Ember's Enchilada's

This was one of the first things I made after moving out on my own!  SO easy and so tasty!  I have 2 versions below, one with flour tortillas and a corn version.

Prep time: 10min
Cook time: 20-30min.

Ember's Enchilada's
Flour tortillas/Corn tortillas
1 large can mild red enchilada sauce
1 1/2 cups precooked chicken (rotisserie or strips)
4 cups Mozzarella or Monterey Jack cheese
1 yellow or red onion (optional)


 Preheat oven to 450 degrees and spray 9x13 pan with cooking spray
 Set up your ingredients like an assembly line, makes things much easier.  Place a small amount of each ingredient in tortilla then roll.

 fill pan, then add enchilada sauce

Add desired amount of cheese on top
Bake at 450 for 20-30 min or until melted and bubbly

CORN STACKERS
Same oven temp, same cook time.

After lining bottom of dish with tortillas add each ingredient and a sprinkling of sauce
then layer as high as you like 
 

Add sauce and cheese 

 Bake at 450 for 20min or until melted and bubbly

Yum!! It's not even 8am here and your making me want enchiladas. lol, the funny thing is thats what i'm making for dinner. I've never seen it made that way but looks great!!
